Lemon Thyme Roast Chicken

This was delicious and easy peasy to make. Yay to fuss free recipes.

Ingredients

1 whole chicken (this was 1.5kg)
1 tbsp oil
1 tbsp dried thyme
1 tbsp lemon zest
1 tsp dried coriander
Salt and pepper to taste
1 bulb garlic and onion each
Other assorted vegetables to roast with chicken (carrots, potatoes)
Lemon wedges for serving

Directions

Mix together oil, herbs, spices and salt. Rub mixture on chicken, inside and out, and marinate for an hour or longer if you can.

Preheat oven to 180 degrees C.

Spread veggies tossed with oil, salt and pepper on a sheet tray and arrange to use them as pedestal on which to place chicken.

Cut garlic and onion in huge chunks, salt and stuff in the chicken cavity.

Roast chicken for 45 mins to 1 1/2 hours depending on its weight, until skin is crisp and golden brown.

Serve with lemon wedges.
